- 4 egg yolks (or 2 whole eggs)
- 1 cup of milk
- 2 cups of floor
- 1 can of kernel corn
- 1 teaspoon of salt
- 1 teaspoon of baking powder
- 1 tablespoon of melted butter
- Beat eggs well, add milk then the sifted dry ingredients and the melted butter. Add the well drained corn. Fry in butter until brown. Serve with syrup or jelly.
This variation of Corn Fritters is a family favorite. They cook and look a lot like pancakes but the taste offers a pleasant variety.
